Preparation
- Gather all the ingredients together. Wash and slice your zucchinis and mushrooms.
Cooking
- In a large skillet, heat the olive oil over medium heat until it’s shimmering but not smoking.
- Add the sliced mushrooms to the skillet. Sauté for about 3-4 minutes, or until they begin to soften.
- Toss in the zucchini and minced garlic, stirring well to combine. Cook for an additional 5-7 minutes, or until the zucchini is tender and bright green.
- Sprinkle with salt and pepper to taste, and toss in any optional herbs if you’re feeling fancy. Cook for an extra minute to let the flavors meld together.
- Remove from heat and serve warm, garnished with fresh herbs if desired.
Notes
Don't overcrowd the pan to avoid steaming the vegetables. Quality ingredients make a significant difference. Feel free to customize by adding your favorite seasonings or more veggies.
