  • 2 medium medium-sized zucchinis, sliced into half-moons
  • 8 oz fresh mushrooms, sliced (button or cremini work well)

Preparation
  1. Gather all the ingredients together. Wash and slice your zucchinis and mushrooms.
Cooking
  1. In a large skillet, heat the olive oil over medium heat until it’s shimmering but not smoking.
  2. Add the sliced mushrooms to the skillet. Sauté for about 3-4 minutes, or until they begin to soften.
  3. Toss in the zucchini and minced garlic, stirring well to combine. Cook for an additional 5-7 minutes, or until the zucchini is tender and bright green.
  4. Sprinkle with salt and pepper to taste, and toss in any optional herbs if you’re feeling fancy. Cook for an extra minute to let the flavors meld together.
  5. Remove from heat and serve warm, garnished with fresh herbs if desired.

Notes

Don't overcrowd the pan to avoid steaming the vegetables. Quality ingredients make a significant difference. Feel free to customize by adding your favorite seasonings or more veggies.
