Delicious Cottage Cheese Egg Bites

Fluffy, protein-packed, and customizable, these Cottage Cheese Egg Bites are perfect for breakfast, brunch, or a healthy snack. Soft, creamy, and easy to make, they can be flavored with your favorite veggies, herbs, or cheese.

Ingredients
  

  • 6 large eggs
  • ½ cup cottage cheese
  • ¼ cup shredded cheddar or mozzarella cheese optional
  • ½ cup chopped vegetables spinach, bell peppers, mushrooms, etc.
  • 1 teaspoon garlic powder or onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh herbs parsley, chives, or thyme for garnish

  • Muffin tin or silicone egg bite molds
  • Mixing bowl
  • Whisk or fork
  • Measuring cups and spoons

Method
 

  1. Preheat oven:
  2. Set oven to 350°F (175°C). Grease a muffin tin or silicone molds lightly with oil or cooking spray.
  3. Prepare the egg mixture:
  4. In a mixing bowl, whisk together eggs, cottage cheese, cheese (if using), garlic powder, salt, and pepper until smooth.
  5. Stir in chopped vegetables.
  6. Fill the molds:
  7. Pour the egg mixture evenly into the prepared muffin tin or molds, filling about ¾ full.
  8. Bake:
  9. Bake for 20–25 minutes, or until the egg bites are set and slightly golden on top.
  10. Remove from oven and let cool for a few minutes.
  11. Serve:
  12. Garnish with fresh herbs and serve warm.

Notes

Customize with cooked bacon, ham, or sausage for added protein.
Can be stored in the fridge for 3–4 days or frozen for up to a month.
Reheat in the microwave for 30–60 seconds before serving.
Use silicone molds for easy removal and uniform egg bites.
