- Preheat the oven to 375°F (190°C) and grease a muffin tin or use silicone muffin liners for easy removal.
- In a large bowl, whisk together the cottage cheese and eggs until well combined. Stir in the chopped spinach and grated cheese. Season with salt and pepper to your liking.
- Pour the mixture evenly into the muffin tin, filling each cup about three-quarters full.
- Place the muffin tin in the preheated oven and bake for about 20 minutes, or until the egg bites are set and slightly golden on top.
- Let them cool for a few minutes before gently removing them from the tin. Enjoy warm, or let them cool completely before storing for later.
