  • 4 large eggs Room temperature eggs whisk more easily.
  • 1 cup baby spinach, chopped Use any other vegetables of your choice.
  • 1/2 cup grated cheese Cheddar works well but feel free to substitute.

Preparation
  1. Preheat the oven to 375°F (190°C) and grease a muffin tin or use silicone muffin liners for easy removal.
  2. In a large bowl, whisk together the cottage cheese and eggs until well combined. Stir in the chopped spinach and grated cheese. Season with salt and pepper to your liking.
  3. Pour the mixture evenly into the muffin tin, filling each cup about three-quarters full.
  4. Place the muffin tin in the preheated oven and bake for about 20 minutes, or until the egg bites are set and slightly golden on top.
  5. Let them cool for a few minutes before gently removing them from the tin. Enjoy warm, or let them cool completely before storing for later.

Notes

These bites can be served with a fresh salad, crispy toast, salsa, or avocado slices. Customize with different veggies and herbs for varied flavors. Store leftovers in an airtight container in the fridge for up to 4 days, or freeze for up to 3 months.
