  • 1 medium onion, chopped Base for flavor in the stew.
  • 3 cloves garlic, minced Enhances the flavor.
  • 4 cups beef broth The liquid base for the stew.
  • 2 tablespoons tomato paste Adds richness and depth.
  • 2 teaspoons Worcestershire sauce For a savory, umami flavor.
  • 1 teaspoon dried thyme Adds a fragrant herb flavor.
  • 1 leaf bay leaf Add for flavor during simmering.

Method
 

Preparation
  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef pieces with salt and pepper, then brown them in the pot in batches. Once browned, remove the beef and set aside.
  2. In the same pot, reduce the heat to medium, add the chopped onion, and cook until softened (about 3-4 minutes). Add the garlic and cook for an additional minute until fragrant.
  3. Add the tomato paste, stirring it into the onions and garlic. Then return the beef to the pot, along with the carrots, potatoes, beef broth, Worcestershire sauce, thyme, and bay leaf. Stir everything together and bring the mixture to a boil.
Cooking
  1. Cover the pot, reduce the heat to low, and let your stew simmer for about 1.5 to 2 hours. Stir occasionally to let the flavors meld together and the beef become tender.
  2. Before serving, taste and adjust the seasoning with additional salt and pepper if necessary. Remove the bay leaf.
Serving

Notes
