Preparation
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the beef pieces with salt and pepper, then brown them in the pot in batches. Once browned, remove the beef and set aside.
- In the same pot, reduce the heat to medium, add the chopped onion, and cook until softened (about 3-4 minutes). Add the garlic and cook for an additional minute until fragrant.
- Add the tomato paste, stirring it into the onions and garlic. Then return the beef to the pot, along with the carrots, potatoes, beef broth, Worcestershire sauce, thyme, and bay leaf. Stir everything together and bring the mixture to a boil.
Cooking
- Cover the pot, reduce the heat to low, and let your stew simmer for about 1.5 to 2 hours. Stir occasionally to let the flavors meld together and the beef become tender.
- Before serving, taste and adjust the seasoning with additional salt and pepper if necessary. Remove the bay leaf.
Serving
- Ladle the Delicious Beef Stew into bowls, and enjoy it with crusty bread or over rice for a filling meal!
Notes
For added variety, feel free to mix in other vegetables like peas or green beans. Leftovers can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
