  • 2 ripe bananas, mashed Aim for brown spots for ultimate sweetness
  • 1/2 cup milk use dairy or non-dairy alternatives like almond milk
  • 2 large eggs
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat the waffle iron according to the manufacturer’s instructions to medium-high heat.
  2. In a mixing bowl, mash the ripe bananas until smooth, leaving a few small lumps for texture if desired.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and optional cinnamon.
  4. In another bowl, mix the mashed bananas with the milk, eggs, oil, and vanilla extract until well-combined.
  5. Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix; a few lumps are okay!
Cooking
  1. Lightly grease the waffle iron if necessary.
  2. Pour the batter into the preheated waffle iron and cook according to the manufacturer’s instructions, usually for about 4-5 minutes, until golden brown.
  3. Carefully remove the waffles and serve immediately with your choice of toppings.

Notes

Store leftover waffles in an airtight container in the fridge for up to 3 days or freeze for up to a month. Reheat in a toaster or preheated oven at 350°F for 5-10 minutes for best results.
