Preparation
- Preheat the waffle iron according to the manufacturer’s instructions to medium-high heat.
- In a mixing bowl, mash the ripe bananas until smooth, leaving a few small lumps for texture if desired.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and optional cinnamon.
- In another bowl, mix the mashed bananas with the milk, eggs, oil, and vanilla extract until well-combined.
- Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix; a few lumps are okay!
Cooking
- Lightly grease the waffle iron if necessary.
- Pour the batter into the preheated waffle iron and cook according to the manufacturer’s instructions, usually for about 4-5 minutes, until golden brown.
- Carefully remove the waffles and serve immediately with your choice of toppings.
Notes
Store leftover waffles in an airtight container in the fridge for up to 3 days or freeze for up to a month. Reheat in a toaster or preheated oven at 350°F for 5-10 minutes for best results.
