  • ½ cup rolled oats
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 2 pieces eggs
  • ¼ cup milk or dairy-free alternative
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your waffle maker according to the manufacturer's instructions.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. In a separate bowl, whisk together the flour, oats, baking powder, cinnamon, and salt.
  4. Add the eggs, milk, and vanilla extract to the mashed bananas and mix well until fully blended.
  5. Gradually fold the dry mixture into the wet mixture, stirring gently until combined.
Cooking
  1. Spray your waffle maker with a non-stick spray.
  2. Pour about 1/2 cup of the batter onto the heated waffle maker and close the lid, cooking until golden brown (around 5 minutes).
  3. Carefully remove the waffles and serve while warm with your favorite toppings.

Notes

Store leftover waffles in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze in a single layer and transfer to a freezer bag for up to 3 months. Reheat in a toaster for best results.
