Ingredients
  

For the Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups butter, melted
  • 2 tablespoons granulated sugar
For the Cheesecake Filling
  • 4 packages cream cheese, softened (8-ounce each)
  • 1.5 cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
For the Apple Filling
  • 3 cups peeled and sliced apples (Granny Smith works well)
  • 0.5 cups brown sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cinnamon
For the Salted Caramel Sauce
  • 1 cup granulated sugar
  • 6 tablespoons salted butter
  • 0.5 cups heavy cream
  • 1 teaspoon sea salt (to taste)

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix well until crumbs are evenly coated.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for about 10 minutes and then allow to cool.
Make the Apple Filling
  1. In a medium bowl, mix sliced apples, brown sugar, lemon juice, and cinnamon. Allow the mixture to sit for about 30 minutes.
Prepare the Cheesecake Filling
  1. Beat the softened cream cheese and sugar in a mixing bowl until smooth and fluffy.
  2. Add eggs, one at a time, and mix until well combined. Stir in vanilla and cinnamon.
Assemble the Cheesecake
  1. Pour half of the cheesecake filling into the prepared crust. Layer half of the apple mixture on top, followed by the remaining cheesecake filling. Finish with the rest of the apple filling.
Bake
  1. Bake for 1 hour or until the center is set. Allow it to cool in the oven with the door cracked for about 1 hour. Then, refrigerate for at least four hours or overnight.
Make the Salted Caramel Sauce
  1. In a saucepan, heat sugar over medium heat, stirring until it melts and turns golden brown.
  2. Add butter and then heavy cream, stirring until smooth. Stir in sea salt.
Serve
  1. Drizzle the cooled cheesecake with salted caramel before serving. Enjoy every decadent bite!

Notes

Ensure your cream cheese is softened for a smooth filling. Granny Smith apples work best for a tart contrast, but feel free to use your favorite variety. Allow cheesecake to cool properly for the best texture.
