Ingredients
  

For the Cookie Dough
  • 1 cup unsalted butter, softened Make sure it is at room temperature.
  • 1 cup brown sugar
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 cups chocolate chips Use semi-sweet for best flavor.
For the Cheesecake Filling
  • 16 ounces cream cheese, softened Also at room temperature.
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs

Method
 

Preparation
  1. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  2. Beat in the eggs, one at a time, followed by the vanilla extract.
  3. In another bowl, mix together the flour, baking soda, and salt. Gradually add this mixture to the butter mixture, stirring until just combined.
  4. Fold in the chocolate chips.
Making the Cheesecake Filling
  1. In a separate bowl, whip the softened cream cheese until smooth.
  2. Add in the granulated sugar and vanilla, mixing until well combined.
  3. Finally, add the eggs one at a time, mixing until smooth and creamy.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. In a greased baking pan, spread half of the cookie dough evenly, pressing it down to create a base.
  3. Pour the cheesecake filling over the dough, spreading it evenly.
  4. Drop spoonfuls of the remaining cookie dough on top of the cheesecake.
  5. Bake in the preheated oven for about 30-35 minutes until the top is golden and the cheesecake is set.
  6. Let it cool completely before slicing into bars.
