Main Ingredients
  • 1 bag (32 oz) tater tots (gluten-free)
  • 1 lb ground beef or turkey (or plant-based substitute)
  • 1 medium onion, chopped
  • 2 cups mixed vegetables (carrots, peas, corn) Use any available vegetables.
  • 1 can (10.5 oz) dairy-free cream of mushroom soup
  • 1 cup vegetable broth
  • Salt and pepper, to taste
  • 1 cup dairy-free cheese, grated (optional) For added richness.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, cook your ground beef or turkey until browned. Drain any excess grease and add the chopped onion. Cook until the onion is translucent.
  3. Stir in the mixed vegetables. Cook for another 3-4 minutes.
  4. Add the dairy-free cream of mushroom soup and vegetable broth to the skillet. Stir well until combined. Season with salt and pepper to taste.
  5. Pour the meat and veggie mixture into a greased 9x13 inch baking dish. Spread the mixture evenly.
  6. Top it with the tater tots, arrang them in a single layer. If desired, sprinkle dairy-free cheese on top.
Baking
  1. Place the casserole in the preheated oven and bake for about 30 minutes, or until the tater tots are crisp and golden brown.
  2. Allow the casserole to cool slightly before serving. Enjoy!

Notes

Store leftovers in an airtight container for up to 3 days. Reheat in the microwave or oven. You can also freeze the assembled casserole before baking.
