Preparation
- Preheat your oven to 400°F (200°C).
- In a large skillet over medium heat, cook your ground beef or turkey until browned. Drain any excess grease and add the chopped onion. Cook until the onion is translucent.
- Stir in the mixed vegetables. Cook for another 3-4 minutes.
- Add the dairy-free cream of mushroom soup and vegetable broth to the skillet. Stir well until combined. Season with salt and pepper to taste.
- Pour the meat and veggie mixture into a greased 9x13 inch baking dish. Spread the mixture evenly.
- Top it with the tater tots, arrang them in a single layer. If desired, sprinkle dairy-free cheese on top.
Baking
- Place the casserole in the preheated oven and bake for about 30 minutes, or until the tater tots are crisp and golden brown.
- Allow the casserole to cool slightly before serving. Enjoy!
Notes
Store leftovers in an airtight container for up to 3 days. Reheat in the microwave or oven. You can also freeze the assembled casserole before baking.
