Ingredients

  • 2 medium medium cucumbers diced
  • 3 ripe ripe tomatoes diced
  • 1 medium medium red onion thinly sliced
  • 1/4 cup fresh parsley chopped
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Wash and dice the cucumbers and tomatoes into bite-sized pieces.
  2. Thinly slice the red onion and chop the parsley.
Combining Ingredients
  1. In a large mixing bowl, combine the diced cucumbers, tomatoes, sliced onion, and chopped parsley.
Dressing the Salad
  1. Drizzle the olive oil and lemon juice over the veggies.
  2. Season generously with salt and pepper.
Mixing and Serving
  1. Toss everything gently until the vegetables are well-coated with the dressing.
  2. Let the salad sit in the refrigerator for at least 10 minutes before serving.

Notes

Substitutions: You can switch fresh parsley for mint or cilantro. It’s best enjoyed fresh but can be stored in the fridge for up to 3 days.
