Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the peanut butter, granulated sugar, and brown sugar. Beat them together with an electric mixer until creamy.
- Add in the egg and vanilla, and continue mixing until well incorporated.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet mixture, stirring until fully blended.
- Gently fold in the chocolate chips and Rice Krispies until evenly distributed throughout the cookie dough.
- Using a tablespoon, scoop out portions of dough and place them on the prepared baking sheet, leaving space between each cookie as they will spread while baking.
Baking
- Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
To ensure perfect cookies, use fresh ingredients and avoid overmixing the dough. Experiment by adding chopped nuts or different types of chocolate chips for added flavor.
