Preparation
- Place the boneless, skinless chicken breasts at the bottom of your CrockPot.
- Pour in the chicken broth and heavy cream.
- Sprinkle in the garlic powder, and season generously with salt and pepper. Stir to combine.
Cooking
- Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
- About 20-30 minutes before serving, add the cheese tortellini and spinach (if using) to the pot.
- Remove the chicken, shred it with two forks, and return it to the CrockPot. Stir to combine.
Serving
- Ladle the tortellini into bowls and sprinkle with freshly grated Parmesan cheese before serving.
Notes
Serve with warm, crusty bread or a fresh garden salad. Consider pairing with light white wine or sparkling water.
