Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 package refrigerated cheese tortellini (9-ounce)
  • 2 cups fresh spinach (optional) Add for extra nutrition and flavor.
  • 1 teaspoon garlic powder
  • to taste salt and pepper
  • for serving Grated Parmesan cheese Sprinkle on top before serving.

Method
 

Preparation
  1. Place the boneless, skinless chicken breasts at the bottom of your CrockPot.
  2. Pour in the chicken broth and heavy cream.
  3. Sprinkle in the garlic powder, and season generously with salt and pepper. Stir to combine.
Cooking
  1. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  2. About 20-30 minutes before serving, add the cheese tortellini and spinach (if using) to the pot.
  3. Remove the chicken, shred it with two forks, and return it to the CrockPot. Stir to combine.
Serving
  1. Ladle the tortellini into bowls and sprinkle with freshly grated Parmesan cheese before serving.

Notes

Serve with warm, crusty bread or a fresh garden salad. Consider pairing with light white wine or sparkling water.
