- Start by washing and chopping your vegetables.
Layering
- In your crockpot, place the boneless, skinless chicken breasts at the bottom.
- Layer the chopped onions, carrots, celery, and minced garlic over the chicken.
Seasoning
- Sprinkle thyme, parsley, salt, and pepper over the top.
Cooking
- Gently pour the chicken broth over the layered ingredients. Make sure everything is submerged.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, add the frozen peas.
Serving
- Before serving, shred the chicken directly in the crockpot with two forks.
- Ladle into bowls, top with fresh herbs or cheese if desired, and enjoy!
