  • 1.5 pounds boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth Use low-sodium to control salt level.
  • 1 cup carrots, sliced
  • 1 cup celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
Seasoning
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • to taste Salt and pepper Adjust to preference.
Optional Toppings
  • 1 cup frozen peas Add 30 minutes before serving.
  • Fresh herbs or cheese For topping.

Method
 

Preparation
  1. Start by washing and chopping your vegetables.
Layering
  1. In your crockpot, place the boneless, skinless chicken breasts at the bottom.
  2. Layer the chopped onions, carrots, celery, and minced garlic over the chicken.
Seasoning
  1. Sprinkle thyme, parsley, salt, and pepper over the top.
Cooking
  1. Gently pour the chicken broth over the layered ingredients. Make sure everything is submerged.
  2. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  3. About 30 minutes before serving, add the frozen peas.
Serving
  1. Before serving, shred the chicken directly in the crockpot with two forks.
  2. Ladle into bowls, top with fresh herbs or cheese if desired, and enjoy!

Notes

If you want to switch up the ingredients, consider adding diced potatoes or other favorite vegetables. Avoid adding too much salt at the beginning; adjust towards the end for best flavor.
