Preparation
- Begin by trimming any excess fat from the beef stew meat and cutting it into 1-inch pieces.
- In a skillet, heat a splash of oil and sauté the chopped onion and minced garlic until they are fragrant and translucent (about 3-4 minutes).
Cooking
- In your crockpot, add the sautéed onions and garlic, followed by the beef, beef broth, soy sauce, Worcestershire sauce, salt, pepper, onion powder, and garlic powder. Stir well to mix.
- Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
- About 20 minutes before serving, cook the egg noodles according to the package instructions in a separate pot. Drain and set aside.
- Once the beef is tender, taste and adjust seasoning if necessary. Serve the beef tips over the noodles, garnish with chopped parsley, and enjoy!
Notes
For healthier options, consider using lean beef cuts or swapping egg noodles for whole grain or gluten-free pasta. Avoid adding too much liquid at the beginning, as the meat will release moisture during cooking. After cooking, store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months.
