Preparation
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, toss the chopped potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper until well-coated.
- Add the sliced onions to the same bowl and combine everything again, ensuring the onions are evenly coated.
- Spread the potato and onion mixture in a single layer on a large baking sheet, ensuring they have room to get crispy.
Cooking
- Place the baking sheet in the preheated oven and bake for about 30 minutes.
- Halfway through, take them out to give them a good toss for even cooking.
- Check for doneness; the potatoes should be golden brown and crispy.
Serving
- Remove from the oven, sprinkle with fresh herbs if desired, and serve hot.
Notes
Leftovers can be stored in an airtight container for up to 3 days in the refrigerator, or frozen for up to a month. Reheat in the oven at 375°F (190°C) for about 10-15 minutes.
