Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, toss the chopped potatoes with olive oil, garlic powder, onion powder, paprika, salt, and pepper until well-coated.
  3. Add the sliced onions to the same bowl and combine everything again, ensuring the onions are evenly coated.
  4. Spread the potato and onion mixture in a single layer on a large baking sheet, ensuring they have room to get crispy.
Cooking
  1. Place the baking sheet in the preheated oven and bake for about 30 minutes.
  2. Halfway through, take them out to give them a good toss for even cooking.
  3. Check for doneness; the potatoes should be golden brown and crispy.
Serving
  1. Remove from the oven, sprinkle with fresh herbs if desired, and serve hot.

Notes

Leftovers can be stored in an airtight container for up to 3 days in the refrigerator, or frozen for up to a month. Reheat in the oven at 375°F (190°C) for about 10-15 minutes.
