Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the diced potatoes and sliced onions.
  3. Drizzle olive oil over the potato and onion mixture. Add garlic powder, paprika, salt, and pepper. Toss well until all the pieces are evenly coated.
  4. Line a baking sheet with parchment paper and spread the potato and onion mixture in a single layer.
Cooking
  1. Place the baking sheet in the oven and roast for about 30 minutes, stirring halfway through.
  2. Check for doneness; potatoes should be crispy and golden brown. Add more time if needed.
