Preparation
- Thoroughly wash the potato under cold running water using a brush to scrub off any dirt. Pat it dry with a towel.
- Gently poke several holes all over the potato with a fork to release steam while cooking.
- Rub the potato with olive oil, ensuring it’s well-coated. Sprinkle salt and pepper evenly for added flavor.
Cooking
- Place the potato on a microwave-safe plate and microwave on high for 5 minutes.
- After 5 minutes, flip the potato and microwave for an additional 3-5 minutes, depending on your microwave's wattage.
- The potato is done when soft to the touch. If needed, add 1-minute increments until fully cooked.
Serving
- Let the potato rest for 2-3 minutes. Cut it open, fluff the insides with a fork, and add your favorite toppings.
Notes
If storing leftovers, allow them to cool completely before placing in an airtight container. Can last up to 3–4 days in the fridge. Reheat in the microwave for 1–2 minutes.
