Ingredients
  

For the cheese sticks
  • 4 medium medium potatoes, peeled and grated Select starchy potatoes for best results.
  • 1 cup shredded cheese (cheddar or mozzarella) Feel free to mix different types of cheese.
  • 1/2 cup all-purpose flour
  • 1/2 cup breadcrumbs Use panko breadcrumbs for an extra crunch.
  • 1 large egg, beaten Acts as a binding agent.
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • to taste Oil for frying Choose an oil with a high smoke point.

Method
 

Preparation
  1. Grate the peeled potatoes and place them in a clean kitchen towel. Squeeze out as much moisture as possible.
  2. In a large bowl, combine the grated potatoes, shredded cheese, all-purpose flour, and beaten egg. Season with salt and pepper, and mix until evenly combined.
  3. Take a small amount of the potato mixture and shape it into stick shapes (about 3 inches long).
  4. Roll each stick in breadcrumbs to coat it thoroughly.
Cooking
  1. In a large frying pan, heat oil over medium-high heat. To test if the oil is ready, drop a tiny bit of the potato mixture in; it should sizzle.
  2. Carefully place each stick in the hot oil and fry until golden brown and crispy, about 3-4 minutes on each side.
  3. Remove the sticks and place them on a plate lined with paper towels to absorb excess oil.

Notes

These cheese sticks pair well with various dipping sauces or sides. Consider serving with a light salad or zesty garlic dip. Store leftovers in an airtight container for up to three days; reheat in the oven or air fryer.
