Preparation
- Preheat your oven to 425°F (220°C).
- Soak the cut potato wedges in cold water for about 30 minutes.
- Drain and dry the wedges thoroughly using a clean kitchen towel or paper towels.
- In a large mixing bowl, toss the dried potato wedges with olive oil, garlic powder, minced garlic, onion powder, smoked paprika, salt, and pepper.
- Spread the seasoned wedges out evenly on a baking sheet lined with parchment paper or a silicone mat.
Baking
- Bake in the preheated oven for about 25-30 minutes, flipping halfway through.
- Remove from oven, sprinkle grated Parmesan cheese on top, and return to the oven for an additional 5 minutes, or until cheese is bubbly and golden.
Serving
- Garnish with chopped parsley if desired and serve hot with your favorite dipping sauces.
