For the Cod
  • 4 pieces Cod fillets About 4-6 ounces each
  • 1 cup All-purpose flour
  • ½ cup Cornmeal
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • ½ teaspoon Garlic powder
  • ½ teaspoon Onion powder
  • 1 large Egg Beaten
  • ½ cup Milk

  • 4 pieces Burger buns Toasted

Method
 

Preparation
  1. Pat the cod fillets dry with paper towels to ensure a crispy coating.
  2. In a mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, black pepper, garlic powder, and onion powder. Mix well.
  3. In another bowl, whisk together the beaten egg and milk. Pour this mixture into the dry ingredients and stir until a batter forms.
Cooking
  1. Heat about ½ inch of vegetable oil in a large skillet or frying pan over medium-high heat until hot.
  2. Dip each cod fillet into the batter, ensuring it's fully coated. Allow any excess batter to drip off.
  3. Carefully place the battered cod fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy.
  4. Use a slotted spoon to transfer the fried cod to a paper towel-lined plate to drain excess oil.
Assembly
  1. Take a toasted burger bun and layer it with lettuce, the crispy fried cod, a slice of tomato, and tartar sauce. Top with the other half of the bun.
