Method
Preparation
- Pat the cod fillets dry with paper towels to ensure a crispy coating.
- In a mixing bowl, combine the all-purpose flour, cornmeal, baking powder, salt, black pepper, garlic powder, and onion powder. Mix well.
- In another bowl, whisk together the beaten egg and milk. Pour this mixture into the dry ingredients and stir until a batter forms.
Cooking
- Heat about ½ inch of vegetable oil in a large skillet or frying pan over medium-high heat until hot.
- Dip each cod fillet into the batter, ensuring it's fully coated. Allow any excess batter to drip off.
- Carefully place the battered cod fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy.
- Use a slotted spoon to transfer the fried cod to a paper towel-lined plate to drain excess oil.
Assembly
- Take a toasted burger bun and layer it with lettuce, the crispy fried cod, a slice of tomato, and tartar sauce. Top with the other half of the bun.
Serving
- Serve your crispy fried cod sandwich hot and enjoy!
Notes
Consider pairing with coleslaw, crispy fries, or a fresh salad. Store leftovers in an airtight container in the refrigerator for up to two days. Reheat in preheated oven to maintain crispiness.
