Ingredients
  

Fritter Mixture
  • 2 cups fresh or frozen corn (thoroughly thawed and drained if frozen)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup milk (or a plant-based alternative)
  • 1/4 cup green onions (finely chopped) Can substitute with bell peppers or jalapeños
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • as needed Oil for frying (vegetable or olive oil)

Preparation
  1. If using fresh corn, shuck the ears and slice the kernels off. For frozen corn, ensure it is thawed and drained.
  2. In a large mixing bowl, whisk together the flour, baking powder, salt, and pepper. In another bowl, beat the eggs and then add in the milk and chopped green onions.
  3. Gradually add the corn kernels into the flour mixture. Pour the egg mixture into the bowl and stir until just combined. Be careful not to overmix; a few lumps are okay!
  4. In a large frying pan, heat about 1/4 inch of oil over medium heat. You’ll know it’s ready when a small drop of batter sizzles upon contact.
  5. Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of a spatula. Fry for about 3-4 minutes on each side or until they are golden brown and crispy.
  6. Remove the fritters from the oil and let them drain on paper towels. Serve them warm with your favorite toppings.

Notes

If you have leftovers, store in an airtight container in the refrigerator for up to 3 days or freeze them for up to a month. Reheat on a baking sheet in a 350°F (175°C) oven until warm and crispy again.
