- In a medium saucepan, combine the water, butter, sugar, and salt. Bring this mixture to a boil over medium heat, stirring occasionally until the butter melts.
- In a separate bowl, combine the flour, baking powder, and cinnamon.
- Once the water mixture is boiling, remove it from the heat and quickly stir in the flour mixture until a smooth dough forms.
- Allow the dough to cool for about 5 minutes. Then, add the eggs one at a time, mixing well after each addition until the dough is smooth and shiny.
- Pour the oil into a deep frying pan or pot, about 2 inches deep, and heat over medium heat until it reaches 350°F (175°C).
- Use a piping bag fitted with a large star tip to pipe small donut shapes directly into the hot oil. Alternatively, you can pipe long strips and cut them into bite-sized pieces.
- Fry the dough pieces in batches for about 3-4 minutes or until golden brown, turning them occasionally for even cooking.
- Remove them from the oil and place them on a paper towel to drain excess oil. While still warm, toss them in a mixture of sugar and cinnamon until evenly coated.
- These delightful bites can be served warm on their own or with your favorite dipping sauces.
Notes
Use a candy thermometer to ensure the oil temperature is just right. Store leftovers in an airtight container for up to 2 days. For reheating, place them in an oven at 350°F (175°C) for about 5 minutes to regain their crispiness. Feel free to experiment with toppings!
