Ingredients
  

For the Chicken
  • 1 pound chicken tenders
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1 cup buffalo sauce
For the Wrap
  • 4 large tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup ranch or blue cheese dressing (for serving)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Season the chicken tenders with salt and pepper.
  2. Set up a breading station with flour, beaten eggs, and breadcrumbs in three shallow dishes.
  3. Dredge each chicken tender in flour, dip it into the egg, and then coat with breadcrumbs.
Cooking
  1. Place the breaded chicken tenders on a baking tray and bake for 20 minutes or until golden brown.
  2. Once cooked, transfer the chicken to a bowl and pour buffalo sauce over, mixing well.
Assembly
  1. Lay a tortilla flat and place buffalo chicken in the center.
  2. Top with shredded lettuce, diced tomatoes, and cheese, and drizzle with ranch or blue cheese dressing.
  3. Fold in the sides of the tortilla and roll it up from the bottom to secure the fillings.
Serving
  1. Slice in half and serve with extra buffalo sauce or dressing on the side.

Notes

Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven to maintain crispiness.
