Preparation
- Preheat your oven to 400°F (200°C). Season the chicken tenders with salt and pepper.
- Set up a breading station with flour, beaten eggs, and breadcrumbs in three shallow dishes.
- Dredge each chicken tender in flour, dip it into the egg, and then coat with breadcrumbs.
Cooking
- Place the breaded chicken tenders on a baking tray and bake for 20 minutes or until golden brown.
- Once cooked, transfer the chicken to a bowl and pour buffalo sauce over, mixing well.
Assembly
- Lay a tortilla flat and place buffalo chicken in the center.
- Top with shredded lettuce, diced tomatoes, and cheese, and drizzle with ranch or blue cheese dressing.
- Fold in the sides of the tortilla and roll it up from the bottom to secure the fillings.
Serving
- Slice in half and serve with extra buffalo sauce or dressing on the side.
