Preparation
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Prepare the potatoes by washing and cutting them into wedges.
- In a large bowl, combine olive oil, minced garlic, smoked paprika, dried oregano, salt, and pepper. Mix well.
- Toss the potato wedges in the olive oil mixture until evenly coated.
- Spread the coated wedges onto the prepared baking sheet in a single layer.
Cooking
- Bake for 25 minutes, flipping the wedges halfway through.
- Remove from the oven and sprinkle grated Parmesan cheese evenly over the wedges.
- Return to the oven and bake for an additional 10 minutes, or until cheese is melted and golden.
- Let cool for a few minutes before serving.
- Serve with a sprinkle of fresh parsley if desired.
Notes
For extra crispy wedges, soak the potato wedges in cold water for at least 30 minutes before baking. Avoid overcrowding the baking sheet.
