For the chicken
  • 2 large chicken breasts (boneless, skinless)
Breading mixture
  • 1 cup Parmesan cheese (grated)
  • 1 cup breadcrumbs (preferably Italian seasoned)
  • 2 large eggs whisked
  • 1 tablespoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
Cooking spray
  • Olive oil spray for coating

Preparation
  1. Begin by patting the chicken breasts dry with a paper towel.
  2. In one bowl, whisk together the eggs.
  3. In another bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, salt, and pepper.
Breading
  1. Dip each chicken breast into the egg mixture, letting any excess drip off.
  2. Coat in the Parmesan breadcrumb mix, pressing down to ensure it sticks well.
Cooking
  1. Preheat your air fryer to 390°F (200°C).
  2. Spray the air fryer basket with olive oil spray to prevent sticking.
  3. Place the coated chicken breasts in the basket, ensuring they’re not overcrowded.
  4. Spray the top of the chicken with olive oil spray.
  5. Air fry the chicken for about 12-15 minutes, flipping halfway through, until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
Serving
  1. Remove the chicken from the air fryer and let rest for a few minutes before slicing.
  2. Serve with your favorite dipping sauce or sides.

Notes

For extra crisp, try double-breading your chicken by repeating the egg and breadcrumb steps. Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months. Reheat in the air fryer at 350°F (175°C) for about 5-7 minutes.
