  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin (optional) for added flavor
  • Fresh parsley or herbs for garnish (optional)

Preparation
  1. Start by rinsing and draining the white beans. This removes excess sodium and helps achieve that creamy texture.
  2. In a food processor, combine the rinsed beans, olive oil, lemon juice, garlic, salt, pepper, and cumin (if using).
  3. Pulse the ingredients until the mixture is completely smooth. You may need to scrape down the sides a couple of times to ensure everything is well blended.
  4. Give your dip a taste! If it needs more brightness, add another splash of lemon juice; if it feels a little plain, maybe a touch more salt will do the trick.
  5. Transfer your creamy white bean dip to a serving bowl and garnish with fresh parsley or herbs of your choice. Serve with fresh veggies, pita chips, or crunchy crackers.

Notes

For substitutions, vinegar can work in place of lemon juice. Add tahini for a richer taste. Let the dip sit in the fridge for at least 30 minutes before serving for best flavor. Store in an airtight container for up to 5 days or freeze for up to 3 months.
