Preparation
- Pat the salmon fillets dry with a paper towel and season both sides with salt and pepper.
Cooking Salmon
- In a large skillet, heat olive oil over medium-high heat.
- Add the salmon fillets, cooking for about 4-5 minutes per side, or until golden brown and cooked through.
- Remove the salmon from the skillet and set aside.
Making the Sauce
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream, stirring continuously.
- Add the sun-dried tomatoes, Italian seasoning, and Parmesan cheese, mixing well until the sauce heats through and thickens.
Final Touches
- Lower the heat and stir in the fresh spinach until it wilts.
- Return the salmon to the skillet, spooning the sauce over the top and letting it simmer for an additional 2-3 minutes.
- Plate your dish and drizzle with more sauce if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet, adding a splash of cream or water if needed. Avoid microwaving to prevent sauce separation.
