Ingredients
  

For the Salmon
  • 4 fillets salmon fillets (skinless) Use fresh or thawed salmon.
  • 2 tablespoons olive oil For cooking the salmon.
  • Salt and pepper to taste Salt and pepper For seasoning the salmon.
For the Creamy Sauce
  • ½ cup sun-dried tomatoes (chopped) Use oil-packed sun-dried tomatoes for more flavor.
  • 1 cup heavy cream Ensure cream is at room temperature.
  • 3 cloves garlic (minced) Fresh garlic is recommended.
  • ½ cup Parmesan cheese (grated) Can substitute with Pecorino Romano.
  • 1 teaspoon Italian seasoning
For the Spinach
  • 2 cups fresh spinach Wash and roughly chop before adding.

Method
 

Preparation
  1. Pat the salmon fillets dry with a paper towel and season both sides with salt and pepper.
Cooking Salmon
  1. In a large skillet, heat olive oil over medium-high heat.
  2. Add the salmon fillets, cooking for about 4-5 minutes per side, or until golden brown and cooked through.
  3. Remove the salmon from the skillet and set aside.
Making the Sauce
  1. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  2. Pour in the heavy cream, stirring continuously.
  3. Add the sun-dried tomatoes, Italian seasoning, and Parmesan cheese, mixing well until the sauce heats through and thickens.
Final Touches
  1. Lower the heat and stir in the fresh spinach until it wilts.
  2. Return the salmon to the skillet, spooning the sauce over the top and letting it simmer for an additional 2-3 minutes.
  3. Plate your dish and drizzle with more sauce if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet, adding a splash of cream or water if needed. Avoid microwaving to prevent sauce separation.
