  • 2 cups cooked chicken, shredded Use leftover rotisserie chicken for convenience.
  • 1 can artichoke hearts, drained and chopped (14 oz) Canned or jarred artichokes work well.
  • 2 cups fresh spinach, chopped Can substitute with frozen spinach.
  • 1 cup cream cheese, softened
  • 1 cup sour cream Greek yogurt can be used as a substitute.
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon red chili flakes Optional for added spice.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the softened cream cheese, sour cream, garlic, salt, and pepper. Mix until smooth.
  3. Gently fold in the shredded chicken, chopped spinach, and artichokes until well combined.
  4. Stir in half of the mozzarella and Parmesan cheese, then pour the mixture into a greased casserole dish.
  5. Sprinkle the remaining mozzarella and Parmesan cheese on top.
Baking
  1. Place the casserole in the preheated oven and bake for about 25-30 minutes, or until the top is golden and the edges are bubbling.
  2. Let it cool for a few minutes before serving.

Notes

Pair with a fresh green salad or garlic bread for a complete meal. Leftovers can be stored in the refrigerator for up to three days and can be frozen for up to three months.
