  • 4 cloves cloves of roasted garlic
  • 1/4 cup cream cheese
  • 1/4 cup milk (or almond milk for a low-carb alternative)
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Chopped chives or parsley for garnish

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the cauliflower into florets, ensuring even sizes for uniform cooking.
  3. Roast garlic in the oven for about 20 minutes until soft and lightly golden.
Cooking
  1. Toss the cauliflower florets with olive oil, salt, and pepper, spread on a baking sheet, and roast for about 25-30 minutes until tender and slightly caramelized.
  2. In a food processor, combine the roasted cauliflower, roasted garlic, cream cheese, milk, and butter. Blend until smooth and creamy.
  3. Taste and adjust the seasoning with additional salt or pepper. Add more milk if a thinner consistency is desired.
Serving
  1. Spoon the creamy mash into a serving bowl and garnish with chopped chives or parsley.

Notes

For added flavor, consider adding a sprinkle of parmesan cheese. If storing leftovers, use an airtight container in the refrigerator for up to five days, or freeze for a month. Reheat with a splash of milk to restore creaminess.
