Preparation
  1. Combine the rolled oats, almond milk, pumpkin puree, pumpkin pie spice, maple syrup, vanilla extract, and a pinch of salt in a mixing bowl. Mix well until fully combined.
  2. Transfer the mixture into an airtight container or mason jar to soak overnight.
  3. Seal and refrigerate for at least 4 hours, or ideally overnight.
  4. In the morning, stir the oats and add your desired toppings such as chopped nuts, dried fruits, or yogurt.
  5. Serve chilled, and enjoy!

Notes

Store in the refrigerator for 3-5 days in an airtight container. Add fresh fruits right before eating for best freshness. You can reheat in the microwave if desired, stirring in 30-second increments.
