Ingredients
  

For the salad
  • 2 cups pasta (your choice: rotini, penne, or bowties) Cooked until al dente
  • 1 cup diced cucumbers
  • 1 cup diced bell peppers (red, green, or yellow)
  • 1 cup halved cherry tomatoes Optional, can be added right before serving
  • 1/2 cup diced red onion
For the dressing
  • 3/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lemon juice Adds tangy flavor
  • Salt and pepper to taste
  • Optional: Fresh herbs (parsley or dill) for garnish For added freshness and flavor

Preparation
  1. Start by boiling a pot of salted water. Add the pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool it down.
  2. While the pasta is cooking, dice the cucumbers, bell peppers, and onion, and halve the cherry tomatoes.
  3. In a small bowl, whisk together the mayonnaise, sour cream, lemon juice, salt, and pepper until combined.
  4. In a large bowl, mix the cooled pasta with the diced vegetables. Pour the dressing over the pasta and toss gently until everything is well coated.
  5. Garnish with fresh herbs, if desired. Chill in the refrigerator for about 30 minutes to let the flavors meld before serving. Enjoy!
