Preparation
- Gather all the ingredients and have them ready, including chopping the onion, bell pepper, and garlic.
Cooking
- In a large pot or deep skillet over medium heat, add a splash of oil. Once hot, add the diced chicken breast and sliced sausage. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Toss in the chopped onion, minced garlic, and diced bell pepper. Sauté these for another 2-3 minutes until the veggies are slightly softened.
- Sprinkle the Cajun seasoning, salt, and pepper over the mixture, stirring everything well to combine.
- Pour in the chicken broth and then add the pasta into the pot. Make sure the pasta is submerged in the liquids.
- Bring to a gentle boil, then cover and reduce the heat. Let it simmer for about 12-15 minutes, stirring occasionally, until the pasta is al dente.
- Once the pasta is cooked, slowly stir in the heavy cream and let it simmer for a couple more minutes to thicken up.
- Serve it hot, garnished with freshly chopped parsley for that perfect touch.
Notes
This dish stores wonderfully in the refrigerator for about 3-4 days. For reheating, microwave individual portions or warm it on the stove over medium heat, adding a splash of chicken broth if it has thickened too much. You can also freeze it for up to a month.
