Ingredients
  

Pasta and protein
  • 8 oz pasta (penne or linguine)
  • 1 lb chicken breast, diced Use Halal chicken.
  • 1 cup Andouille sausage, sliced Ensure it’s Halal.
Sauce and seasonings
  • 1 cup heavy cream Can substitute with a lower-fat alternative.
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 each bell pepper, diced
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
Garnish
  • to taste Chopped parsley For garnish.

Method
 

Preparation
  1. Gather all the ingredients and have them ready, including chopping the onion, bell pepper, and garlic.
Cooking
  1. In a large pot or deep skillet over medium heat, add a splash of oil. Once hot, add the diced chicken breast and sliced sausage. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  2. Toss in the chopped onion, minced garlic, and diced bell pepper. Sauté these for another 2-3 minutes until the veggies are slightly softened.
  3. Sprinkle the Cajun seasoning, salt, and pepper over the mixture, stirring everything well to combine.
  4. Pour in the chicken broth and then add the pasta into the pot. Make sure the pasta is submerged in the liquids.
  5. Bring to a gentle boil, then cover and reduce the heat. Let it simmer for about 12-15 minutes, stirring occasionally, until the pasta is al dente.
  6. Once the pasta is cooked, slowly stir in the heavy cream and let it simmer for a couple more minutes to thicken up.
  7. Serve it hot, garnished with freshly chopped parsley for that perfect touch.

Notes

This dish stores wonderfully in the refrigerator for about 3-4 days. For reheating, microwave individual portions or warm it on the stove over medium heat, adding a splash of chicken broth if it has thickened too much. You can also freeze it for up to a month.
