  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced

  • 1 cup heavy cream
  • 2 cups fresh spinach, chopped
  • ½ cup grated Parmesan cheese
  • 2 teaspoons Italian seasoning

Cooking Instructions
  1. In a large pot over medium heat, add the Halal Italian sausage. Break it apart with a wooden spoon as it cooks until browned.
  2. Add the onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, or until the vegetables are softened and fragrant.
  3. Pour in the chicken broth, stirring to combine. Bring the mixture to a simmer, allowing it to cook for about 10 minutes.
  4. Lower the heat and stir in the heavy cream. Let it simmer gently for another 5 minutes, allowing the flavors to meld.
  5. Add the fresh spinach and Italian seasoning, stirring until the spinach wilts. Season with salt and pepper to taste.
  6. Stir in the grated Parmesan cheese right before serving, ensuring that it melts into the creamy concoction.
  7. Pour into bowls, and if you like, garnish with extra Parmesan or fresh herbs. Enjoy each comforting spoonful!

Notes

For vegetarian options, use plant-based sausage. Avoid boiling after adding the cream to prevent curdling. Can be stored for up to 4 days in the refrigerator or frozen for 3 months.
