  1. Start by draining and rinsing your chickpeas. Peeling chickpeas for extra creaminess is optional.
Blending
  1. In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, minced garlic, ground cumin, and a pinch of salt.
  2. Blend until you achieve a somewhat smooth consistency. If the mixture seems too thick, add water, one tablespoon at a time, until you reach your desired consistency.
Final Touches
  1. Taste your hummus and adjust the salt and lemon juice as necessary.
  2. Transfer to a serving bowl, drizzle more olive oil on top, and add your favorite toppings like paprika or fresh herbs.

Notes

For an ultra-smooth texture, gradually add ice water while blending. Feel free to experiment with ingredients like roasted garlic or spicy peppers. No tahini? Substitute with peanut butter or sunflower seed butter. Store in an airtight container in the refrigerator for 3-5 days or freeze in portions for up to 3 months.
