  • 1 15 oz can chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • to taste none salt
  • as needed none water for adjusting consistency
  • to taste none paprika for garnish

Preparation
  1. Start by draining and rinsing your canned chickpeas under cold water.
  2. In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, minced garlic, cumin, and a pinch of salt. Blend for about 1 minute until the mixture is well combined.
  3. If your hummus seems a bit thick, gradually add cold water, a tablespoon at a time, and blend until you’ve reached your desired creaminess.
  4. Give your hummus a taste, and adjust the seasoning with more salt or lemon juice as needed.
  5. Spoon the hummus into a serving bowl and use the back of a spoon to create a swirl on top. Drizzle with olive oil and sprinkle paprika for a pop of color.
  6. Enjoy your flavorful hummus with pita bread, crisp vegetables, or even on a simple sandwich.

Notes

For an ultra-smooth texture, consider peeling the chickpeas before blending. Substitute tahini with Greek yogurt or sunflower seed butter as needed. Experiment with adding flavors like roasted red peppers, sun-dried tomatoes, or chili.
