  • 1 pound Halal Italian sausage
  • 1 unit onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth (ensure Halal)
  • 1 can (14.5 oz) diced tomatoes
  • 1 bag (9 oz) tortellini (cheese or spinach variety)
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • to taste Salt and pepper
  • as needed Grated Parmesan cheese for serving

Method
 

Preparation
  1. In a skillet over medium heat, cook the Halal Italian sausage until browned and cooked through. Drain any excess fat.
  2. In your crockpot, combine the browned sausage, chopped onion, minced garlic, chicken broth, and diced tomatoes. Stir to combine.
Cooking
  1. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  2. About 30 minutes before serving, add the tortellini and heavy cream, stir to combine and cover.
  3. Just before serving, stir in the fresh spinach and season with salt and pepper to taste.
  4. Ladle the soup into bowls and sprinkle with freshly grated Parmesan cheese before enjoying.

Notes

For a lighter version, consider using ground turkey or chicken as a substitute for the sausage. If you prefer tortellini al dente, add it toward the end of the cooking time. Experiment with herbs like basil or oregano for enhanced flavor. Store in an airtight container for 3-4 days in the fridge or freeze for up to 3 months.
