Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with a little butter or cooking spray.
- In a medium bowl, mix together graham cracker crumbs and melted butter until fully combined. Press the mixture evenly into the bottom of your prepared baking dish.
- In a large bowl, beat the softened cream cheese until creamy. Add in the sugar and vanilla extract, and mix until smooth. Then, add the eggs one at a time, beating well after each addition.
- Fold the chopped apples into the cream cheese mixture gently. Pour this delicious mixture over the graham cracker crust.
- Drizzle the caramel sauce evenly over the top of the cheesecake layer.
- In another bowl, combine brown sugar, flour, cinnamon, and oats. Mix until crumbly and sprinkle over the caramel layer.
Baking
- Place the baking dish in the preheated oven and bake for about 50-60 minutes or until the edges are golden and the center is set.
Cooling and Serving
- Allow the bars to cool completely before cutting into squares. Drizzle with additional caramel, if desired.
- Serve and enjoy! These bars taste even better after chilling in the fridge for a few hours!
Notes
For best results, make sure that the cream cheese is at room temperature for smoother blending. You can substitute the sugar for coconut sugar or a sugar alternative if preferred. Granny Smith apples can be used for added tartness, while Honeycrisp lends extra sweetness. Keep an eye on the baking time to prevent over-browning; cover with foil if necessary.
