Ingredients
  

For the crust
  • 1.5 cups 1 ½ cups graham cracker crumbs
  • 0.5 cups ½ cup unsalted butter, melted
For the cheesecake layer
  • 2 cups 2 cups cream cheese, softened
  • 1 cup 1 cup sugar
  • 1 teaspoon 1 teaspoon vanilla extract
  • 2 large 2 large eggs
For the apple topping
  • 2 cups 2 cups peeled and chopped apples
  • 0.5 cups ½ cup caramel sauce
For the streusel topping
  • 0.25 cups ¼ cup brown sugar
  • 0.5 cups ½ cup all-purpose flour
  • 0.5 teaspoon ½ teaspoon cinnamon
  • 0.25 cups ¼ cup rolled oats

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with a little butter or cooking spray.
  2. In a medium bowl, mix together graham cracker crumbs and melted butter until fully combined. Press the mixture evenly into the bottom of your prepared baking dish.
  3. In a large bowl, beat the softened cream cheese until creamy. Add in the sugar and vanilla extract, and mix until smooth. Then, add the eggs one at a time, beating well after each addition.
  4. Fold the chopped apples into the cream cheese mixture gently. Pour this delicious mixture over the graham cracker crust.
  5. Drizzle the caramel sauce evenly over the top of the cheesecake layer.
  6. In another bowl, combine brown sugar, flour, cinnamon, and oats. Mix until crumbly and sprinkle over the caramel layer.
Baking
  1. Place the baking dish in the preheated oven and bake for about 50-60 minutes or until the edges are golden and the center is set.
Cooling and Serving
  1. Allow the bars to cool completely before cutting into squares. Drizzle with additional caramel, if desired.
  2. Serve and enjoy! These bars taste even better after chilling in the fridge for a few hours!

Notes

For best results, make sure that the cream cheese is at room temperature for smoother blending. You can substitute the sugar for coconut sugar or a sugar alternative if preferred. Granny Smith apples can be used for added tartness, while Honeycrisp lends extra sweetness. Keep an eye on the baking time to prevent over-browning; cover with foil if necessary.
