Preparation
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a mixing bowl, combine the graham cracker crumbs and melted butter until evenly moistened. Press into the bottom of the prepared baking dish to form the crust.
- In another bowl, beat together the softened cream cheese and sugar until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gently fold the diced apples into the cream cheese mixture.
- Pour the apple cheesecake mixture over the crust and smooth with a spatula.
Streusel Topping
- In a separate bowl, mix flour, brown sugar, rolled oats, cinnamon, and softened butter until crumbly. Sprinkle over the cheesecake layer.
Baking
- Bake for 45-50 minutes, or until the cheesecake is set and the streusel is golden brown.
Cooling and Serving
- Allow the bars to cool completely in the pan. Drizzle with caramel sauce before cutting them into squares.
