Ingredients
  

For the crust
  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted
For the cheesecake layer
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups apples, peeled and diced Granny Smith or Honeycrisp recommended
  • 1 cup caramel sauce
For the streusel topping
  • 1/2 cup flour
  • 1/4 cup brown sugar
  • 1/4 cup rolled oats
  • 1/2 teaspoon cinnamon
  • 1/4 cup butter, softened

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a mixing bowl, combine the graham cracker crumbs and melted butter until evenly moistened. Press into the bottom of the prepared baking dish to form the crust.
  3. In another bowl, beat together the softened cream cheese and sugar until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Gently fold the diced apples into the cream cheese mixture.
  5. Pour the apple cheesecake mixture over the crust and smooth with a spatula.
Streusel Topping
  1. In a separate bowl, mix flour, brown sugar, rolled oats, cinnamon, and softened butter until crumbly. Sprinkle over the cheesecake layer.
Baking
  1. Bake for 45-50 minutes, or until the cheesecake is set and the streusel is golden brown.
Cooling and Serving
  1. Allow the bars to cool completely in the pan. Drizzle with caramel sauce before cutting them into squares.

Notes

Store in an airtight container in the refrigerator for up to five days or freeze for up to three months. Reheat in the oven or microwave before serving.
