  • 2 tablespoons butter
  • 1 cup diced mushrooms
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1 inch fresh ginger, grated
  • 2 cups heavy cream
  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Chopped parsley for garnish

Cooking Instructions
  1. Melt the butter in a large pot over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  2. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Add the diced mushrooms and cook for another 5-7 minutes until softened.
  4. Sprinkle in the Cajun seasoning, stirring to combine for about 1 minute to enhance flavors.
  5. Slowly pour in the vegetable broth, stirring well, and let it simmer for around 5 minutes.
  6. Gradually add in the heavy cream, stirring constantly, and bring to a gentle simmer until slightly thickened.
  7. Add the fresh oysters, seasoning with salt and pepper to taste, and cook for about 3-5 minutes until they are plump.
  8. Ladle the stew into bowls, and garnish with chopped parsley.

Notes

For substitutions, replace oysters with shrimp or chicken, and ensure proper cooking. Avoid boiling aggressively after adding cream to prevent separation. Store leftovers in an airtight container for up to 3 days or freeze for 2 months.
