Preparation
- Pour the cranberry gelatin powder into a medium mixing bowl. Add 1 cup of boiling water and stir well until the gelatin is completely dissolved.
- Once the gelatin is dissolved, add 1 cup of cold water to the bowl and give it a gentle stir.
- Fold in the halved fresh cranberries, granulated sugar, and chopped nuts. Optionally, add mini marshmallows for extra sweetness.
- Pour the mixture into a mold or a decorative bowl. Cover it and place it in the refrigerator for a minimum of 4 hours, or until it’s set completely.
- Once set, run a warm knife around the edges of the mold to help it loosen. Invert the mold onto a platter or serve directly from the bowl.
- If using cream cheese, spread it on top before serving for added creaminess.
Notes
Store in the refrigerator for up to 5 days. It can also be frozen, but texture may change slightly upon thawing. Thaw in the refrigerator overnight for best results. Make the night before for best flavor.
