Ingredients

Main Ingredients
  • 1 lb ground beef or lamb Use lamb for traditional flavor.
  • 1 cup chopped onions
  • 1 cup mixed vegetables (peas, carrots, corn) Can use fresh or frozen.
  • 2 tbsp tomato paste
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
Topping
  • 4 cups mashed potatoes (made with garlic and cream) Store-bought mashed potatoes can be used.
  • 1 cup shredded cheddar cheese Optional, for added richness.

Method

Preparation
  1. Preheat Your Oven: Set your oven to 400°F (200°C) to get it nice and hot for baking.
  2. Cook the Meat: In a large skillet over medium heat, brown the ground beef or lamb until it’s fully cooked, which should be about 5-7 minutes. Drain any excess fat.
  3. Sauté the Veggies: Add the chopped onions and mixed vegetables to the skillet. Stir and cook for an additional 5 minutes until the onions become translucent.
  4. Add Flavor: Mix in the tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Allow this mixture to simmer for 10 minutes, letting those flavors meld.
  5. Prepare the Mashed Potatoes: While your filling simmers, prepare your creamy garlic mashed potatoes based on your preferred recipe or use store-bought for a quicker alternative.
Assembly & Baking
  1. Assemble the Pie: Spread the meat and vegetable mixture in an even layer in a baking dish. Top generously with your mashed potatoes, smoothing it out with a spatula. If you’re using cheddar cheese, sprinkle it on top.
  2. Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and the tops are lightly browned.
  3. Serve and Enjoy: Remove from the oven and let it cool for a few minutes before serving. Enjoy your Cozy Shepherd's Pie with family and friends!

Notes

For variations, consider using ground turkey or chicken. Store leftovers in an airtight container and refrigerate for up to 3 days or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for about 20-25 minutes.
