  • 1 cup espresso Brewed from an espresso machine or strong coffee
  • 1 cup coconut milk Can substitute with almond or oat milk
  • 1-2 drops pink food coloring Optional, for visual appeal
  • Sugar or sweetener to taste Adjust to personal preference
  • Whipped cream For topping
  • Shredded coconut For garnish

Preparation
  1. Start by brewing your espresso shot. Depending on your machine, this could take around 5 minutes. Alternatively, use a strong brewed coffee.
  2. In a small saucepan, gently heat the coconut milk over medium-low heat, making sure not to boil it.
  3. Once the coconut milk is warm, add one or two drops of pink food coloring if desired, and sweeten to taste with sugar or your preferred sweetener. Stir well.
  4. In your favorite mug, pour the shot of espresso followed by the warm coconut milk mixture. Stir gently to mix.
  5. Top with a swirl of whipped cream and sprinkle shredded coconut on top.

Notes

Best enjoyed fresh, but leftovers can be refrigerated for up to 2 days. Reheat gently to maintain texture.
