Preparation
- Start by brewing your espresso shot. Depending on your machine, this could take around 5 minutes. Alternatively, use a strong brewed coffee.
- In a small saucepan, gently heat the coconut milk over medium-low heat, making sure not to boil it.
- Once the coconut milk is warm, add one or two drops of pink food coloring if desired, and sweeten to taste with sugar or your preferred sweetener. Stir well.
- In your favorite mug, pour the shot of espresso followed by the warm coconut milk mixture. Stir gently to mix.
- Top with a swirl of whipped cream and sprinkle shredded coconut on top.
Notes
Best enjoyed fresh, but leftovers can be refrigerated for up to 2 days. Reheat gently to maintain texture.
