Preparation
  1. Wash and peel the potatoes, then cut them into fry shapes, aiming for uniform sizes for even cooking.
  2. Soak the cut potatoes in cold water for about 30 minutes to help remove excess starch for extra-crispy fries.
  3. Preheat your oven to 425°F (220°C). After soaking, drain and thoroughly pat the fries dry with paper towels.
  4. Place the dried fries in a large mixing bowl and drizzle with olive oil, then sprinkle with salt and pepper. Toss gently until evenly coated.
  5. Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for about 25-30 minutes, flipping halfway through, until golden and crispy.
  6. Once baked, transfer the fries to a serving bowl and toss them with freshly squeezed lemon juice, crumbled feta, and dried oregano while still hot.

Notes
