Ingredients
  

For the soup
  • 1 package Wontons (store-bought or homemade)
  • 1 cup Shiitake mushrooms, sliced Can substitute with button mushrooms.
  • 2 tablespoons Fresh ginger, minced
  • 2 Lemons (zest and juice)
  • 4 cups Vegetable or chicken broth
  • 2 cloves Garlic, minced
  • 1/4 cup Green onions, chopped (for garnish)
  • 2 tablespoons Soy sauce
  • 1 tablespoon Sesame oil
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large pot, heat the vegetable or chicken broth over medium heat.
  2. Add the minced garlic and ginger, letting the flavors infuse into the broth for about 3-5 minutes.
  3. Once fragrant, add the sliced shiitake mushrooms to the pot and cook for another 4-5 minutes until the mushrooms become tender.
  4. Gently add the wontons to the pot and allow them to cook for about 5-6 minutes, or until they float to the top, indicating they’re ready.
  5. Stir in the soy sauce, lemon zest, and a splash of fresh lemon juice.
  6. Season with salt and pepper to taste.
  7. Once everything is heated through, ladle the soup into bowls and generously sprinkle with chopped green onions.

Notes

For variations, if you can’t find shiitake mushrooms, feel free to substitute with any preferred variety. Be careful not to overcook the wontons; once they float, they’re ready to serve! Taste the broth before adding additional salt; adding soy sauce might make it salty enough.
