  • 1 medium butternut squash, peeled and cubed
  • 1 cup cranberries (fresh or dried)
  • 4 oz goat cheese, crumbled
  • 2 tbsp olive oil

  • 1 tbsp maple syrup (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Peel and cube the butternut squash into even pieces, aiming for about 1-inch cubes.
  3. In a large bowl, toss the cubed squash with olive oil, salt, pepper, and, if desired, cinnamon.
  4. Lay the seasoned squash on a baking sheet in a single layer, allowing space for roasting.
Cooking
  1. Place the baking sheet in the oven and roast for about 20 minutes.
  2. After 20 minutes, add the cranberries to the baking sheet and return to the oven for an additional 10 minutes.
  3. Once roasted, remove from the oven and sprinkle the crumbled goat cheese over the warm squash and cranberries.
Serving

For substitutions, use feta or a dairy-free alternative instead of goat cheese. Ensure the oven is preheated for best results, and avoid overcrowding the baking sheet.
