  • 2 cups cooked chicken, shredded Can use rotisserie chicken for convenience
  • 4 cups mashed potatoes (homemade or store-bought)
  • 1 cup chicken broth Ensure it's halal
  • 1 cup peas and carrots Fresh or frozen
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped parsley for garnish

Preparation
  1. Peel and chop the potatoes into even chunks. Boil them in salted water until tender, about 15-20 minutes. Drain, then mash with butter, adding salt and pepper to taste.
  2. Shred your cooked chicken into bite-sized pieces.
Cooking
  1. In a medium saucepan, heat the chicken broth on low. Add in the shredded chicken and peas and carrots. Stir occasionally until heated through, about 5-7 minutes.
Assembly
  1. In each bowl, place a generous serving of mashed potatoes as the base. Pour the chicken and vegetable mixture over the top.
Garnish
  1. Sprinkle chopped parsley for a touch of freshness and color. Serve warm and enjoy!

Notes

For substitutions, you can use cooked turkey instead of chicken or cauliflower mash for a lower-carb option. Prepare the mashed potatoes in advance to save time.
