Preparation
- Peel and chop the potatoes into even chunks. Boil them in salted water until tender, about 15-20 minutes. Drain, then mash with butter, adding salt and pepper to taste.
- Shred your cooked chicken into bite-sized pieces.
Cooking
- In a medium saucepan, heat the chicken broth on low. Add in the shredded chicken and peas and carrots. Stir occasionally until heated through, about 5-7 minutes.
Assembly
- In each bowl, place a generous serving of mashed potatoes as the base. Pour the chicken and vegetable mixture over the top.

Notes
For substitutions, you can use cooked turkey instead of chicken or cauliflower mash for a lower-carb option. Prepare the mashed potatoes in advance to save time.
