Preparation
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until combined and press the mixture evenly into a greased 9x13 inch baking pan.
- Bake the crust in the oven for about 10 minutes or until it’s lightly golden. Set it aside to cool slightly.
- In a large mixing bowl, beat the softened cream cheese and sugar until creamy. Add eggs one at a time, mixing thoroughly after each addition, and then stir in the vanilla extract.
- In another bowl, combine the chopped apples and cinnamon, and toss them until coated.
Assembly and Baking
- Pour the cheesecake filling over the cooled crust. Sprinkle the spiced apples evenly over the top and lightly press them in. Drizzle the caramel sauce over everything.
- Bake in the oven for 30-35 minutes until the center is set but still slightly jiggly and the edges are lightly browned.
Cooling and Serving
- Allow the cheesecake bars to cool completely at room temperature before refrigerating for at least 2 hours. Once chilled, slice into squares.
Notes
For a unique twist, use digestive biscuits instead of graham crackers. Pre-chopped apples save time. Don’t overbake; bars should have a slight jiggle when removed from the oven. Allow to cool completely to achieve the perfect texture.
