Ingredients
  

For the crust
  • 1.5 cups 1 ½ cups graham cracker crumbs
  • 0.5 cups ½ cup unsalted butter, melted
  • 2 tablespoons 2 tablespoons sugar
For the cheesecake filling
  • 3 packages 3 (8-ounce) packages cream cheese, softened
  • 1 cups 1 cup sugar
  • 3 large 3 large eggs
  • 1 teaspoon 1 teaspoon vanilla extract
For the apple topping
  • 2 cups 2 cups peeled and chopped apples
  • 1 teaspoon 1 teaspoon cinnamon
For topping
  • 1 cup 1 cup caramel sauce

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until combined and press the mixture evenly into a greased 9x13 inch baking pan.
  3. Bake the crust in the oven for about 10 minutes or until it’s lightly golden. Set it aside to cool slightly.
  4. In a large mixing bowl, beat the softened cream cheese and sugar until creamy. Add eggs one at a time, mixing thoroughly after each addition, and then stir in the vanilla extract.
  5. In another bowl, combine the chopped apples and cinnamon, and toss them until coated.
Assembly and Baking
  1. Pour the cheesecake filling over the cooled crust. Sprinkle the spiced apples evenly over the top and lightly press them in. Drizzle the caramel sauce over everything.
  2. Bake in the oven for 30-35 minutes until the center is set but still slightly jiggly and the edges are lightly browned.
Cooling and Serving
  1. Allow the cheesecake bars to cool completely at room temperature before refrigerating for at least 2 hours. Once chilled, slice into squares.

Notes

For a unique twist, use digestive biscuits instead of graham crackers. Pre-chopped apples save time. Don’t overbake; bars should have a slight jiggle when removed from the oven. Allow to cool completely to achieve the perfect texture.
