  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 4 cups vegetable broth
  • 2 teaspoons Cajun seasoning
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • to taste Fresh parsley for garnish

Method
 

Preparation
  1. Begin by heating the olive oil in a large pot over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté until the vegetables are tender and fragrant, approximately 5 minutes.
  2. Toss in the diced potatoes, giving them a good stir to coat in the oil and aromatics. Cook for about 3 minutes to slightly soften the potatoes.
  3. Pour in the vegetable broth, adding the rinsed kidney beans and black beans. Stir well to combine all the ingredients.
  4. Sprinkle in the Cajun seasoning, and add salt and pepper to taste. Give it another stir to evenly distribute the spices.
  5. Allow the stew to come to a boil, then reduce the heat to a simmer. Cover the pot and let it cook for about 15-20 minutes, or until the potatoes are tender.
  6. Once ready, remove from heat, and garnish with fresh parsley before serving hot.

Notes

If you're looking to tweak the recipe, you can substitute the potatoes for sweet potatoes or even add in some corn for added sweetness. Using pre-cooked beans can save time.
