  • 1 cup Cottage Cheese (well-drained)
  • 1 cup All-Purpose Flour (plus extra for dusting)
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 2 tablespoons Olive Oil

Preparation
  1. In a large mixing bowl, combine the well-drained cottage cheese, flour, baking powder, and salt. Mix them together until a shaggy dough forms.
  2. Gradually add water, one tablespoon at a time, until the dough comes together. It should be soft but not sticky.
  3. Lightly flour a clean surface and turn out the dough. Knead gently for about 1-2 minutes until smooth.
  4. Divide the dough into equal portions (about 4-6 pieces). Roll each piece into a ball and then flatten it into a disc, about 1/4 inch thick.
Cooking
  1. Heat a skillet over medium heat and add a splash of olive oil.
  2. Cook each flatbread for 2-3 minutes on each side until golden brown and cooked through.
  3. Remove from the skillet and place on a plate, covering with a towel to keep warm until ready to serve.

Notes

You can experiment with whole wheat flour or gluten-free blends as substitutions. For best results, do not overwork the dough to maintain tenderness.
