  • 1 cup cottage cheese Full-fat or low-fat based on preference.
  • 4 large eggs Fresh eggs for best results.
  • 1/2 cup shredded cheese (cheddar or mozzarella) Choose your favorite cheese.
  • 1/2 cup diced vegetables (e.g., bell peppers, spinach, onions) Any combination of vegetables works.
  • Salt and pepper to taste Adjust seasoning to your liking.
  • Cooking spray or oil for greasing Prevents sticking.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin using cooking spray or a light coating of oil.
  3. In a large bowl, combine the cottage cheese, eggs, shredded cheese, diced vegetables, and salt and pepper. Whisk until smooth and well combined.
  4. Carefully pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.
Baking
  1. Place the muffin tin in the preheated oven and bake for about 20 minutes or until the egg bites are puffed up and set in the center.
  2. Remove from the oven and let cool for a few minutes before gently running a knife around the edges to loosen the bites. Pop them out and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or in the freezer for up to a month. For reheating, microwave for about 30 seconds to 1 minute or reheat in an oven at 350°F for about 10 minutes.
