Preparation
- Preheat your oven to 350°F (175°C).
- Grease a muffin tin using cooking spray or a light coating of oil.
- In a large bowl, combine the cottage cheese, eggs, shredded cheese, diced vegetables, and salt and pepper. Whisk until smooth and well combined.
- Carefully pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.
Baking
- Place the muffin tin in the preheated oven and bake for about 20 minutes or until the egg bites are puffed up and set in the center.
- Remove from the oven and let cool for a few minutes before gently running a knife around the edges to loosen the bites. Pop them out and enjoy!
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days or in the freezer for up to a month. For reheating, microwave for about 30 seconds to 1 minute or reheat in an oven at 350°F for about 10 minutes.
